Coconut Egg en Cocotte

1 Tbsp Butter

• 250g Spinach

• 1 Garlic Cloves

• 125ml Coconut Milk

• 1 Whole Nutmeg

• 4 Eggs

• Sea Salt

• Pepper

• 1 bunch Fresh Chives

Preparation Steps

1. Heat the butter in a pan and add the spinach, garlic, coconut milk and nutmeg. Season

Cook until the spinach is wilted. Drain

Arrange the spinach in the base of 2 ramekins. Crack two eggs and pour into the ramekins.

Bake in the oven for 5-12 minutes, depending on how you like your eggs!. Serve garnished with chives.
